2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup+ 2 tablespoons extra virgin olive oil

3/4 cup grated Swiss cheese

3/4 cup minced ham

About 2/3 cup buttermilk

Preheat oven to 450°F Grease baking sheet.
Sift flour, baking powder, baking soda and salt into medium bowl.
Using pastry blender or fork, cut in olive oil until mixture resembles coarse crumbs.
Stir in cheese, ham and enough buttermilk to make soft dough.
Turn out dough onto lightly floured surface; knead lightly.
Roll out dough 1/2 inch thick.
Cut biscuit rounds with 2-inch cutter.
Place on greased baking sheet.
Bake 8-10 minutes or until browned

These are great for snacking or taking in lunches. DD loves this with butter in her lunch.

Change up the basic recipe simply by changing your meat and chees combination. I also like adding different herbs.

You can also substitute 1 cup whole wheat flour for 1 cup all purpose flour to add more fibre.
